Gluten-Free Teff Brownies

Gluten-Free Teff Brownies      

This recipe is adapted from Wooden Spoon Baking, where cocoa powder and teff flour are used to work wonders and create light, cakey, and moist brownies to delight your taste buds!

Yields 16

Ingredients

 75g (1/2 cup) Teff flour

200g (1 cup) granulated sugar

3 eggs

3/4 cup (1 1/2 sticks) butter, melted

75g (2/3 cup) cocoa powder

2 teaspoons vanilla extract

big pinch of salt

60g (1/2 cup) almond meal

 

Instructions

  1. Line an 8" x 8" baking pan with parchment and set aside. Preheat oven to 350F.
  2. Stir together all ingredients in a mixing bowl with your trusty wooden spoon. Beat briefly to get most of the lumps out, but don't worry about getting a completely smooth batter.
  3. Pour batter into prepared pan, spread into the corners, and smooth the top. Bake 25-30 minutes, until the center is just about cooked, and remove to a cooling rack for 10 minutes.
  4. Grasp the parchment and lift the brownies out of the pan to slice and enjoy.
