An earthy staple in my baking

I’m loving the earthy flavour of brown teff in a gluten-free sourdough pizza crust recipe that I am make into 12, roughly 65 g, small disks that bake quickly in the oven. The tangy flavour is super with soup, salad, or some kind of spread. My starter is fed morning and night with 10 g of the previous starter mixed with 30 g of water and 35 g of flour, which is a equal mix of brown teff and millet. The left over starter goes in the fridge in a large glass weck jar and is used within a week of when the left over jar was started, if not sooner.

Perfect Tested Gluten-free Injeras for us with Celiac Disease

Injera could be life-changing for us with celiac.

We can’t eat bread or anything made with wheat.

Teff is safe for us and injera traditionally is made by adding just water.

Unfortunately, most people add wheat.

It’s really hard to consistently make with 100% teff flour.

I’ve been systematically developing a trustworthy recipe for us.

This my first effort with Berhan teff flour.

It worked really well.

My injeras tested as gluten free, to the same strict level as the Berhan flour.
