Teff Waffles
This teff waffle recipe is nutritiously dense, and filling! This morning we added a tablespoon of Apple Cider Vinegar for the added benefit for the immune system, and is a great substitute for eggs if you want to adapt this recipe to make vegan waffles.
Toppings change with individual preferences: These waffles were topped with Greek Yogurt, mixed berries, and some maple syrup, but you can use almost any topping to make this meal even more delicious!
Teff waffles recipe
1 1/2 cups Ivory/Brown Berhan Teff Flour
4 eggs
3/4 cups water
3 tbsp extra virgin coconut oil (or butter or oil of your choice)
1 tbsp apple cider vinegar
3 tbsp maple syrup or your choice of sweetener
1 tbsp vanilla extract
1 tbsp baking powder
1/2 tsp sea salt
1 tbsp cinnamon powder
Toppings: Experiment with what you like!
Instructions
- Mix dry ingredients in a large bowl
- Beat eggs very well in a separate bowl
- Add wet ingredients to the eggs
- Mix dry and wet ingredients well
- Start cooking in a waffle maker
